1. First, start by preparing the broth. Wash the meat and place it into a pot. Add onion, celery, bay leaf, peppercorns, coriander, and other spices to taste. Pour in water and bring to a boil. Then reduce the heat to medium, add a little salt, and simmer for about an hour, until the meat is tender.

2. When the broth is ready, carefully remove the meat and let it cool slightly. Meanwhile, heat a little oil in a large pot and sauté the diced onion until translucent. Add the minced garlic and cook for a few more minutes, stirring.

3. Add the washed and dried rice to the pot.

4. And finely chopped celery stalk. Optionally, you can also add grated carrot.

5. Carefully strain the broth into a saucepan.

7. Simmer everything over medium heat for about 15 minutes. Meanwhile, separate the meat from the bone and slice it. Add to the pot and cook for another 5 minutes.
