
Turkey Harcho Soup
Description
Harcho soup with turkey is easy to prepare. If you cook the broth in advance, the soup will take 35-40 minutes to make. Add spices and garlic according to your taste preferences. Traditionally, it includes khmeli-suneli and ground black pepper. Classic harcho soup is cooked with Georgian tkemali sauce, which adds a tangy flavor. However, tomato paste and fresh tomatoes in the form of tomato juice also work excellently in this dish. Turkey harcho soup is delicious, incredibly aromatic, and satisfying.

Prepare all the ingredients for making harcho.

Wash the turkey and place it in a pot, pour water over it. Bring to a boil, reduce heat, and skim off the foam.

Cook the meat until tender. This will take one to one and a half hours, depending on the age of the bird.

Peel the onion, wash it, and finely chop. Place in a frying pan. Add 20 ml of refined sunflower oil and lightly sauté the onion until translucent.

Place the onion in a saucepan with the broth and start cooking the harcho.

After 10-15 minutes, add the washed rice to the pot.

Pour 20 ml of sunflower oil into a frying pan. Add tomato paste and tomatoes, which should be finely chopped by any method beforehand. Simmer these ingredients in the pan for 5 minutes.

When the rice in the soup is cooked, add tomato paste with tomatoes. Salt to taste and add spices. Simmer the harcho for another 5-7 minutes over low heat.

At the end of cooking, chop the garlic and add it to the pot.
