Description
Instead of classic beef for the broth, we'll use pork ribs. Replace tkemali with tomato paste. If you have tkemali sauce available, you can add it. As an alternative, you may use pomegranate sauce. Essential khmeli-suneli, walnuts, and garlic will give the soup an aroma that can drive any gourmet crazy. Serve with fresh herbs and sour cream.

Prepare the ingredients for harcho soup. If desired, you can add grated carrots to the sauté along with the onion. Rinse the rice under running water until the water runs clear, then drain in a colander. Remove walnuts from their shells and peel the vegetables.

It's better to use meat on the bone, as this will make the broth richer and more flavorful. Cut the ribs into portion-sized pieces.

Place the meat in a pot and pour in water. Put it on the stove. Bring the broth to a boil and cook until the meat is done. Periodically skim off the foam forming on the broth with a skimmer.

While the broth is cooking, prepare the soup's flavor base. Finely dice the onion. Heat a frying pan, pour in the oil, add the onion and sauté until soft and translucent.

Grind the nuts and garlic. You can do this with a knife or in a coffee grinder, depending on the desired degree of grinding.

Add tomato paste to the sautéed onions in the pan and pour in a couple of ladles of broth from the pot. Reduce the mixture for 3-4 minutes. Add the garlic-nut mixture, salt, khmeli-suneli, and red ground pepper to taste.

Transfer the flavor base from the skillet to the pot with the broth. Continue cooking over slightly below medium heat so the broth can absorb the flavors.

At the final stage, add the prepared rice. Bring the broth to a boil, then turn off the heat after a couple of minutes. Cover the pot with a lid and let it sit for 20 minutes. During this time, the rice will finish cooking.

Serve harcho with chopped coriander and adjika, in case someone wants it spicier. Harcho should be thick. Due to its thick consistency, the soup resembles a stew, and is sometimes even considered a main course.
