
Pleurotus mushroom soup
Description
The soup is easy and quick to prepare. A bowl of oyster mushroom soup will keep you full for a long time. It's a pity that most of us are used to only button mushrooms or porcini, when there are many other mushrooms just as beneficial! Oyster mushrooms help burn cholesterol, are rich in vitamin P, and also strengthen the immune system. You can use either fresh or dried oyster mushrooms to make this soup. Keep in mind, though, that you'll need to use more dried mushrooms. Here's the recipe for oyster mushroom soup: 1. Wash the mushrooms, separate the caps from the stems, and cut them into medium-sized pieces (I used fresh mushrooms). 2. Pour in 2 liters of water and place over heat. 3. While the mushrooms are cooking, wash and peel the carrots, onion, and tomatoes. Finely chop them. It's best to blanch the tomatoes with boiling water, then peel off the skin. 4. Heat olive oil in a frying pan and sauté the onion until golden. 5. Add the carrots and sauté together for about 5 minutes. Then add the tomatoes and simmer for 3 minutes. 6. Wash, peel, and dice the potatoes. 7. As soon as the mushrooms come to a boil, add the potatoes. 8. Let them simmer together for 5–6 minutes. Then add the sautéed vegetables. Cook for another 10 minutes. 9. Finally, add chopped garlic, then turn off the heat. The soup is ready! Serve the soup in bowls, sprinkle with chopped dill, and enjoy. The soup is ready to serve.
