
Buckwheat soup with chicken

The soup is simple and quick to prepare. But did you know that buckwheat groats contain many beneficial nutrients? It's easily digestible and highly nutritious—which is why it should be a regular part of children's and elderly people's diets. Yet, unfortunately, we cook very few dishes using buckwheat. That's why today I'm sharing with you a classic recipe for buckwheat soup with chicken. This soup turns out not only delicious but also very nourishing. Of course, there are countless ways to prepare it, but this particular method—simple and time-tested—is my favorite. Nothing extra, just the essential ingredients—and a delicious soup in your bowl! ;)

Pour water into a pot, add the chicken, and place it on the stove. As soon as the water begins to boil, foam will form. Do not skim it off until the water becomes clear. Now let everything continue to cook while we prepare the vegetables.

Now cut the onion into cubes.

Grate the carrot on a medium grater.

On a skillet pre-greased with vegetable oil, sauté the onion.

Then add the carrots.

Now peel the potatoes and cut them into cubes.

So, now let's toast the buckwheat groats, but first don't forget to rinse them! Toast for about 5 minutes without oil.

Remove the chicken. Clean it from the bones and put it back. You can immediately add bay leaf, black pepper, and salt.

Immediately add the fried onion with carrots.

Of course, we mustn't forget about buckwheat.

Add the potatoes as well. Cook for another 10 minutes, then cover with a lid and let it steep for 10 minutes on the turned-off stove.

So, the soup is ready! Serve hot and sprinkle with herbs.
