To prepare the soup, peel the potatoes and cut them into small cubes.

I will be making soup using broth. I have pre-cooked meat broth. I'll also use the meat in the soup, but it's optional. You can cook the soup simply in water. Put water or broth on the stove and bring to a boil. Add potatoes to the boiling water/broth and let them cook.

Rinse the buckwheat groats in several changes of water. Add the clean groats to the broth and simmer.

Peel the onion and carrot. Chop the vegetables.

Sauté onion and carrot in vegetable oil until soft. Avoid burning the vegetables, as this could make the soup bitter.

About 15-20 minutes have passed since the broth/water began boiling. Add the sautéed vegetables to the broth. Cook everything together until done. If you are making soup with meat, now is the time to add boiled meat, cut into small cubes. Cook the soup until ready. Season the soup with salt and pepper to taste.

Pour the soup into bowls. Serve immediately. If you cooked the soup using a good meat broth and kept the heat low throughout the entire cooking process, your soup will be almost transparent, richly aromatic, and, of course, delicious.
