Description

Gazpacho is a Spanish cold dish similar to the Russian okroshka. There, this soup is served exclusively cold. The Spanish climate dictates its own rules. People cool down with this kind of soup at lunchtime. Our climate, however, is not always hot, so gazpacho soup will be good served hot.

    Step 1

    To prepare the hot "Gazpacho" soup, I used beef and pork broth. When the broth was cooked, I removed the boiled meat from it. It will get in our way, so let's set it aside for now.

    Place a frying pan on the stove. Slice the onion and sauté it in vegetable oil until golden brown. Then add the chopped bell pepper. If you use red pepper, the soup will be brighter. Sauté the pepper and onion together for about 4 minutes.

    Wash the tomatoes. Finely chop them with a sharp knife, cutting off the stems. Add to the pan with the onion and pepper, and simmer until the tomatoes are completely softened. Add chopped garlic and tomato paste. Simmer for another 5 minutes.

    Transfer the entire mixture from the skillet into the hot broth. Add the boiled meat, cut into pieces. Add pitted olives. These can be substituted with olives or corn. Season with salt and pepper to taste. Bring the soup to a boil and cook for another 10 minutes. Add fresh herbs at the end if desired.

    After the time is up, turn off the soup. It's ready and can be served into bowls. Any fresh herbs and sour cream go well with this soup. Croutons or toast are also great when serving.
