1. Cut the bacon into small pieces and place in a heavy-bottomed saucepan. Fry until crispy, then carefully transfer onto a paper towel. Peel and chop the vegetables.

2. Place the onion, pepper, and celery in the pan. Sauté over medium heat, stirring, for about 5 minutes. Add salt and a pinch of pepper. Meanwhile, wash and dry the chicken breast. Sprinkle it with salt and spices to taste.
