
Beef soup
Description
A hearty first course. How to properly prepare Pho soup? It must be a strong, clear beef broth, rich with the aroma of ginger and star anise, combined with rice noodles and boiled beef tenderloin sliced into thin pieces, which perfectly complements the soup. Everything is placed into a bowl, seasoned to taste with herbs, onion, pepper, and lemon juice, then poured over with boiling broth. The soup is ready to serve.

Place the shanks in water and start boiling to make broth. As foam appears, carefully skim it off; the broth should remain clear.

Next, chop a large onion and ginger, then grill until darkened. If you don't have a grill, you can use an oven.

When the broth comes to a boil, add star anise, roasted ginger with onion, salt, and cinnamon. Then reduce the heat and simmer the broth for 2 hours. The broth is ready when the meat easily separates from the bone.

Remove the meat from the broth and cut it into pieces. Strain the broth, then add sugar, fish sauce, and white pepper. Simmer over low heat to keep the broth hot.

Slice the shallot into rings and sauté in vegetable oil until golden brown. Cook the noodles until done, drain in a colander, and rinse with cold water.

Arrange the rice noodles in deep bowls, then add bean sprouts, thinly sliced boiled beef, and fried onions.

Before serving, add thinly sliced chili pepper and fresh herbs. Also add a slice of lime, which gives the soup a refreshing touch.
