
Traditional bean soup
Description
Hearty and aromatic soup. 1. If you are using old beans, add them to the broth as soon as you rinse them and place the meat into the broth, since they take a long time to cook. Young beans from green pods will be ready in just 10 minutes, so add them later, after the potatoes. 2. Peel the vegetables. Finely chop the onion, cut the carrot into small cubes. Cut the potatoes into medium-sized cubes, slices, or strips—whichever you prefer. 3. Add the vegetables to the prepared broth, along with the butter; if using young beans, now is the time to add them as well. Season the soup with salt and pepper. Simmer over medium heat for at least 10–15 minutes, until the potatoes are almost done. 4. Now add the herbs and bay leaf. Stir everything, let the soup boil for another couple of minutes, and it's ready. Serve the soup in bowls and call your family to the table. Serve with fresh herbs and sour cream.
