
Bean soup with pork
Description
Bean soup is prepared on meat broth. Pork ribs work very well for this dish. A generous amount of spices is added to the bean soup. Ladle into bowls and serve.

1. First of all, soak the beans overnight. The beans have swollen and doubled in size. Drain the water and thoroughly rinse the beans with cold water.

2. Place the meat (pork cooks relatively quickly) and beans into a pot, then add water and start boiling. Cook for about one hour or one hour twenty minutes.

3. The broth is almost ready, but it hasn't been salted yet. The meat should be tender, and the beans should have soft insides while their skins remain intact.

4. While the broth is cooking, prepare the sauté. Peel the carrots and onion, chop into pieces, and fry them. After a few minutes, add tomato paste. Simmer for another three to four minutes. Season the broth with salt, add the sautéed mixture, along with allspice, black peppercorns, bay leaf, three cloves, and cardamom seeds. Let it simmer for a few minutes, then turn off the heat and let the soup steep for about fifteen minutes.

5. Grated garlic can be added to the bowl of ready soup if desired.
