
Bean soup with mushrooms
Description
This recipe won't take much time. It's not the simplest bean soup with mushrooms recipe, but all the effort is truly worth it. 1. Soak the beans overnight in cold water. 2. Simmer the beans over low heat until tender. 3. Heat olive oil in a deep skillet. 4. Peel the onion and garlic, finely chop, then add to the skillet and sauté until golden. 5. Remove seeds from the chili pepper, finely chop and add to the skillet. 6. Transfer the onion, garlic, and pepper to the pot with the beans. 7. Season the soup with salt, pepper, and cumin. Simmer for 10–15 minutes. 8. In a separate skillet, fry the mushrooms until cooked through. Season with salt and pepper to taste. 9. When the beans are ready, pour the liquid into a separate container and transfer it to a blender. Blend thoroughly, gradually adding the cooking liquid until the puree is slightly runny. 10. Add the fried mushrooms to the blender and pulse a few times—mushroom pieces should remain noticeable in the soup. 11. Return the finished soup to the heat, bring to a boil, and add a little starch. Cook for just 2–3 minutes. 12. Squeeze juice from a lemon or lime. 13. Cut the avocado into large chunks. 14. Pour the soup into serving bowls, season with lemon juice, and gently place avocado pieces on top. Garnish with fresh herbs. Homemade bean soup with mushrooms can be additionally served with sour cream or plain yogurt, cream cheese, or smoked meats.
