
Soup with pickled cucumbers
Description
This soup is very popular in my family. It's light both on the stomach and in preparation. It's especially good the day after holiday feasts. I think this simple cucumber soup recipe will be a hit with your loved ones too, so give it a try and enjoy the result. Ladle into bowls and serve.

Step 1

We take apart the chicken, cut it into pieces. Wash, cover with water, and start cooking the broth.

Cut the cucumbers into small cubes. You can grate them, but I prefer them in pieces. Pour water over them and place on low heat to simmer.

Peel and wash the potatoes, then cut them into cubes. Add them to the broth.

Peel the onion, carrot, and celery root.

Grate the celery on a grater, finely chop the carrots and onion, and add all these vegetables to the broth.

When the potatoes are fully cooked, add the stewed pickled cucumbers, black pepper, and bay leaf to the pot. If you do this earlier, the potatoes may turn out hard instead of tender.

Let the soup simmer for about 5 minutes, then taste it for salt. Only after that add the necessary amount of salt. Add chopped fresh herbs and, if desired, some ketchup.
