
Classic soup
Description
The soup is simple and quick to prepare. Bozbash is a soup of the peoples of the Caucasus, and each region has its own way of making it. The fundamental principle involves using lamb, vegetables, and dried fruits. I offer you the following version.

Step 1

Place the meat in a pot and pour in two liters of cold water. Bring to a boil, skim off the foam, reduce the heat, and simmer for 30 minutes.

While the meat is cooking, peel and chop the onion (I cut it into cubes about 1x1 cm), and sauté it for about 3 minutes.

After the cooking time is up, remove the meat from the broth and strain the broth. Take the meat off the bones (if you used bone-in lamb). Cut into pieces.

Add to the onion and sauté for another 2 minutes.

Cut the potatoes into cubes and add them to the boiling broth.

Add the sliced peppers, prunes, and tomato paste to the pan with the meat and onions, one after another. Fry for about 5 minutes.

Put all the sautéed mixture into the boiling broth. Don't forget to add salt and herbs. Bring to a boil and simmer over medium heat for 15–20 minutes.
