
Shrimp soup
Description
The soup is easy and quick to prepare. Shrimp soup is a wonderful dish for lunch, which can even be served cold during hot summer weather. You can mix shrimp puree with chilled liquid cream to create a soup with a unique new flavor. Pour into bowls and serve.

Prepare the listed ingredients. Dry the shrimp shells in advance in the oven or on a skillet. You can make the soup using whole shrimp, but then you will need to simmer them for at least 1.5–2 hours until tender.

Peel and rinse the carrots and onion in water. Finely dice the onion and grate the carrots on a fine grater. Pour vegetable oil into a cauldron and sauté the vegetables for about 3-5 minutes until golden brown.

Add the tomato paste and sauté for another 2-3 minutes. Turn off the heat.

If you haven't done this beforehand, sauté the shrimp shells or the shrimp themselves for about 3-5 minutes until browned, stirring occasionally.

Add to them the vegetable sauté with tomato paste, salt, ground black pepper, seasoning, and bay leaves.

Pour in hot water and simmer the entire contents of the container over medium heat for about 1 hour, until the liquid is reduced by half.

Be sure to remove the bay leaves! Transfer the contents of the container to the blender or food processor bowl.

Purée everything for 4-5 minutes, turning it into a mashed consistency.

Strain the mixture through a sieve, transfer it into bowls, and serve the soup warm, garnished with a drizzle of sour cream or mayonnaise.
