
Solyanka soup (classic recipe)
Description
Perfect for lunch. This dish can rightfully be called the highlight of Russian cuisine. A hearty and delicious soup with meat, smoked meats, sausages, and other delicacies is a wonderful idea for lunch. Serve the solyanka with a spoonful of sour cream, garnished with a slice of lemon and a handful of olives. Be sure to try it if you don't already have this recipe in your culinary collection.

1. Wash the meat, place it in a pot, and cover with water. Add the smoked meats to the pot as well. You can also add bay leaf and vegetables for flavor. Simmer the broth over low heat for a couple of hours until the meat is cooked.

2. When the meat is cooked, carefully remove it from the broth, let it cool slightly, and chop it finely. Strain the broth and return it to the heat. Add the chopped meat to the broth.

3. Next, add the meat delicacies. In this case, it's ham and salami.

4. Slice the cucumbers. You can add olives right before serving on a plate or put them directly into the broth. I prefer the second option. Also, I recommend adding a handful of capers.

5. Place everything into the broth, bring to a boil and simmer over low heat. Season with salt to taste.

6. Meanwhile, peel and chop the onion and garlic. Place them in a frying pan with vegetable oil and sauté. Add tomato paste and pour in a little broth or pickle brine.

7. Salt, add pepper and spices to taste. I also recommend adding a teaspoon of sugar. Simmer the sauce for about 5 minutes, stirring.

8. Place it in the broth, gently stir, and cook the solyanka for another 5-7 minutes.

9. Turn off the heat, cover the pot with a lid, and let the solyanka steep for half an hour. Serve hot, optionally garnished with lemon and sour cream.
