
Carrot Potage Soup
Description
The soup is simple and quick to prepare. I must admit, I really like pureed soups, especially those with carrots. This soup stands out with its vibrant color, delicate flavor, and velvety texture. It is served with cream, croutons, or toast.

Prepare the necessary ingredients. Wash and peel the vegetables.

Cut the vegetables into small cubes, pour in the broth, add bay leaf and thyme. Bring to a boil, then simmer over low heat for 30 minutes.

Pour off the broth and strain it. Blend the vegetables with a blender until smooth. Pour in the broth, add nutmeg, salt, and pepper, mix well, and bring to a boil.

Add the grated cheese and cook until the cheese melts. Remove from heat and let stand for 15 minutes, covered.
