
Pear puree soup
Description
The soup is simple and quick to prepare. I suggest making this delicious pureed soup with an unusual ingredient—ripe pear. Vegetables, cream, and ease of preparation will make this soup your favorite. You can prepare it with water or a light chicken broth. Sweet potato can be replaced with pumpkin or carrots added. Those who enjoy bold combinations can top the finished soup with crispy fried smoked bacon or a bit of blue cheese—creamy gorgonzola works best. A mix of nuts and seeds or crunchy croutons would also go perfectly. The choice is yours. Ladle into bowls and serve.

Prepare the ingredients. Use pears that are ripe but firm.

In a heavy-bottomed saucepan, melt half a tablespoon of butter. Add finely chopped onion and cook, stirring, until soft and fragrant. Do not let the onion brown.

Pour in hot water and add the diced potatoes to the pot. Bring to a boil and reduce the heat. Cook the potatoes for 3 minutes.

Add the sliced sweet potato, lightly salt, and cook until the vegetables are tender.

Peel the pears, cut them into cubes, and sprinkle with a teaspoon of lemon juice.

In a skillet, heat the remaining butter and place the pear in a single layer. Let it lightly brown and caramelize. Carefully flip the pieces and lightly sear the other side. Remove the skillet from heat and set aside.
