
Mushroom puree soup
Description
The soup is simple and quick to prepare. Sauté the vegetables and mushrooms, then make a broth and simmer everything together. Garnish each serving of mushroom puree soup with fried mushrooms and serve croutons separately.

Set aside a few small mushrooms for garnish. Finely chop the rest or pass them through a meat grinder.

Cut the carrot into several large pieces, peel the onion, and place it in a saucepan together with the mushrooms. Add a tablespoon of oil and the broth, then simmer covered for 40 minutes over low heat.

Bring the milk to a boil. In a separate saucepan, melt 2 tablespoons of butter.
