
Broccoli puree soup
Description
The recipe won't take much time. If you don't have broth, it's no problem—you can prepare the soup with water as well. To make croutons, cut white bread into cubes and place them on a baking sheet. Brush with olive oil, salt, pepper, and dry in the oven preheated to 200°C for 15 minutes. Serve with herbs and sour cream.

In a heavy-bottomed saucepan, melt the butter.

Separate the broccoli into florets, finely chop the onion, and slice the carrot into rounds.

Add the vegetables to the pot and sauté them in oil for 6-7 minutes, until the onion becomes translucent.

Add the flour to the vegetables and vigorously stir for a minute.

Add the broth to the pot and bring the soup to a boil. Cook for about 15 minutes, until the broccoli becomes tender.

Add salt, pepper, and cream, and bring the soup back to a boil. Blend everything with a blender until smooth.
