
Mushroom soup puree from dried mushrooms
Description
The recipe won't take much time. The soup is incredibly tender and aromatic! You can garnish it with slices of fried mushrooms and ground pepper, or, for example, with cheese chips, grated cheese, or croutons. Be sure to try it—I'm certain even kids will enjoy it. The soup is ready to serve.

Pour boiling water over the dried mushrooms and let them sit for 10–15 minutes until they swell. Then, in a large saucepan, combine butter and olive oil, and place over heat. As soon as bubbles appear in the oil mixture, add the mushrooms, salt, and cook for 10 minutes. Reduce the heat, add chopped shallot, garlic, and spices, and stir well.

In batches, blend the cooked mushrooms with the vegetables in a blender. Add broth to the mushroom puree.

Pour the cream into the soup and heat over high heat for 3-5 minutes. Taste and season to taste.
