
Tomato and rice soup puree
Description
The soup is simple and quick to prepare. The tomato soup turns out a rich orange color, with a bright flavor and a delicate basil aroma. It contains crunchy pieces of ham and rice grains. This soup is delicious—you'll love it! You can add croutons, and if you prefer it spicier, add half a chili pepper when frying the onion. Serve the soup hot.

1. Cut prosciutto or another dry-cured ham into strips and fry in a skillet over medium heat until crispy. Transfer to a paper towel to drain excess fat. Meanwhile, peel the onion and slice it into rings.

2. Wash the tomatoes and cut them into quarters. Remove the stems.

3. Sauté the onion in a deep saucepan on olive oil until browned.

4. Add the chopped tomatoes to the pot.

5. Pour in the broth, mix and add the rice. Cook the soup over low heat. Do not cover with a lid.
