
Tomato soup puree
Description
Hearty and aromatic soup. The quantity here is intended for only 2 servings. If needed, proportionally increase the amount of all ingredients. As for the sour cream, you can add it not to the skillet, but directly to the bowl when serving. Alternatively, you can replace it with heavy cream. Ladle into bowls and serve.

First, boil enough water in a saucepan to submerge the tomatoes. Place the tomatoes in the boiling water, turn off the heat, and let them sit covered for 20 minutes. Then peel the skin off the tomatoes.

Finely chop the garlic and onion, melt the butter in a deep skillet, and sauté the vegetables with the bay leaf until golden brown.

Cut the cooled tomatoes and transfer them to a blender together with the juice. Puree until smooth.

Transfer the puree to a skillet together with the onion, add salt and pepper. Mix the starch with water and pour it into the tomatoes. Simmer for a couple of minutes, then add sour cream and mix everything well.

Watch the soup's consistency. If needed, add water. Remove the bay leaf, ladle the soup into bowls, and add croutons.
