You probably won't make it often, but as a change, you can definitely treat yourself and your loved ones to this sunny soup: 1. Peel the onion and dice it finely. 2. Cut the carrots into small pieces. 3. Melt butter in a frying pan and add the onion and carrots. Simmer over low heat, making sure the vegetables don't brown. 4. Use vegetable or chicken broth. Pour the broth into a saucepan with ginger and bring to a boil. 5. Transfer the carrots and onions to the saucepan, season with salt and pepper. 6. Remove the zest from an orange in three long strips. Grated zest won't work here! 7. Add the orange zest to the saucepan. Simmer the soup over low heat for about 20 minutes. 8. When the carrots are soft, remove the pot from the heat. 9. Carefully remove the orange zest—it's no longer needed. 10. To prevent the puree soup from being too runny, pour the liquid into a separate container. 11. Place the carrots into a blender and blend thoroughly, gradually adding the broth. Blend for a sufficient amount of time until the mixture becomes smooth and uniform. 12. If the soup has cooled slightly, return it to the heat, bring to a boil, and it's ready to serve. 13.
