
Chicken puree soup
Description
A hearty first course. The soup-puree takes a little longer to prepare than an ordinary chicken soup. But the result is such a rich, velvety, and flavorful taste. Don't believe me? Let me show you.

We will peel and wash the vegetables.

Place the chicken breast with vegetables into a pot, pour about 1 liter of water, and set on the stove.

Boil for about 45-50 minutes.

Remove the chicken meat and vegetables from the broth. If the breast has a bone, separate the meat from the bones. Then blend everything together into a puree using a blender.

Dry-roast the flour on a skillet until slightly creamy in color, without adding oil.

Add a little chicken broth to the flour, stir to avoid lumps. Bring to a boil and add milk or cream. Bring to a boil again.

Pour the resulting mixture into the meat and vegetable mixture in parts. Bring to the desired consistency, add salt and spices to taste. If desired, the soup can be boiled once more.

Serve the pureed soup with finely chopped herbs, croutons, or ground nuts.
