
Shrimp puree soup
Description
A hearty first course. This is quite an unusual soup with an incredible consistency. You can use either water or broth—chicken or vegetable, for example—as a base. The cheese can be the kind in foil cups or regular processed cheese slices. Choose spices, dried herbs, or fresh greens according to your taste.

1. Pour water or broth into a saucepan and bring to a boil. Blanch the shrimp with boiling water, cool slightly, and peel.

2. Peel the potatoes and cut into small cubes. Grate the carrots, chop the onion.

3. Grate the processed cheese on a grater and place it in a saucepan. Stir thoroughly until it dissolves completely.

4. Add the onion, carrots, and potatoes. Add salt and spices. Simmer over medium heat for about 15 minutes.

5. Then add the shrimp to the pot and cook for another 5 minutes.

6. Using an immersion blender, blend the soup until smooth. Place back on the heat, bring to a boil, and serve.
