
Potato puree soup
Description
A hearty first course. If you don't have time to prepare broth, you can simply boil a broth cube in a liter of water. You can add other ingredients to this soup to make it thicker and richer in flavor—for example, boiled chicken or leek. Dried basil or ground paprika also work well as spices. Serve the potato puree soup with croutons or green onions. Garnish with fresh herbs and sour cream.

First, prepare the sauté. Peel the onion and finely chop it. Then, in the pot where the soup will be cooked, melt the butter. Add the onion to the butter and sauté until golden, stirring constantly.

Peel the potatoes, cut them into small chunks, and add them to the pot with the onion. Pour the prepared broth over everything and place over medium heat. The potatoes should cook directly in the broth.

After 15 minutes, pour the cream into the broth and season with salt to taste. You can also add a little nutmeg, ground black pepper, or white pepper. At the same time, add the washed and finely chopped mushrooms.

Simmer the soup for another 10 minutes. The potatoes should become soft. Then blend the soup with a blender. If it turns out too thick, you can add a little water or cream and bring it to a boil once again.
