Broccoli and Spinach Puree Soup

Description

Puree soup is usually made from legumes, most often from peas. This is the most common version of the dish. But there are many other recipes with various ingredients, making it possible to prepare puree soups from almost anything. The soup is ready to serve.

    First, cook the broccoli. This will be the liquid base of our soup — the vegetable broth. You can slightly salt the water. Cook frozen broccoli for 30 minutes, and fresh broccoli for no more than 15 minutes.

    While the broccoli is cooking, prepare the remaining vegetables. Slice the onion into thin half-rings or small cubes—either way is fine. Thoroughly rinse the spinach and chop it finely.

    When the broccoli is cooked, remove it with a slotted spoon. You can set aside a few florets to garnish the soup in the bowl. Place the chopped spinach, onion, and cooked broccoli into a bowl. Take an immersion blender and start blending everything. Once the vegetables turn into a puree, you can proceed to the next step.

    Transfer the ground mixture back into the broth. Pour in the cream. Season with salt and pepper to taste. Bring the soup to a boil over low heat. Simmer for a couple more minutes, then turn off the heat.

    That's it, the cream soup is ready. Serve it on a plate and place a broccoli floret on top. The soup will taste even better with sour cream.
