
French puree soup

Wash all the vegetables, peel them, and cut into small pieces.

Pour oil into a saucepan and sauté the onion until translucent.

Then add the potatoes to the onion. Continuously stir the vegetables so they are well coated with oil, and finally add the garlic to the pot.

Add a spoonful of tomato paste. Then mix everything well, pour in water just enough to barely cover all the vegetables, and simmer over medium heat until fully cooked.

When the vegetables are ready, blend them with a blender until smooth.

Then add a teaspoon of butter and half a cup of milk to the resulting mixture. If the soup is too thick, add another half cup of milk. Bring the mixture to a boil, season with salt, and remove from heat.
