
Mediterranean salad with peppers
Description
The salad is quick and easy to prepare. It's a slightly modified version of a traditional Mediterranean pepper salad. The original version tends to be too salty for Russian tastes, so the amount of salt has been reduced from 1 tablespoon to 2 teaspoons. The preparation is very simple – you just need to marinate the onion and, while that's sitting, chop the remaining ingredients, then mix everything together. The salad is ready to serve.

1. Mix red wine vinegar, water, salt, and sugar in a bowl until the salt and sugar dissolve. Add red onion to the resulting dressing and let marinate for at least 15 minutes.

2. While the onion is marinating, prepare the remaining ingredients. Dice red onion, bell pepper, and cucumber into cubes about 1 cm in size. Slice the cherry tomatoes. Crumble the feta cheese.

3. Mix the vegetables, feta cheese, olives, and drained red onion in a large bowl. Pour a quarter cup of vinaigrette over the salad and drizzle with olive oil. Add seasonings to taste, if needed. Serve the salad immediately or refrigerate for up to one day.
