
Mediterranean fish soup
Description
Perfect for lunch. This very tasty and beautiful Mediterranean fish soup is quite simple to prepare. Its special feature lies in the unusual appearance created by large pieces of fish (cod), whole yellow cherry tomatoes, olives, and aromatic rosemary leaves. The flavor of this soup greatly depends on the spices you use and the broth it's cooked in. Actually, you can use either chicken or fish broth. I happened to have some vegetable broth left from a previous cooking session. Using vegetable broth makes the soup as light and lean as possible, which is highly beneficial for your figure—always a plus :) Good luck, and serve the soup hot.

Cut the tomatoes into large cubes. Pass the garlic through a garlic press.

Place the pot over high heat, add oil, and sauté garlic and tomatoes, then reduce the heat. Season with pepper, rosemary, salt, and simmer for about 10 minutes.

Then pour in the vegetable broth and simmer for about 10 more minutes over low heat.

We cut the celery.

Add it to the soup and simmer, covered, for another 10 minutes.

Cut the fish into small pieces.

Wash the cherries and remove the stems.

Place the fish and cherry tomatoes in a pot and simmer over medium-high heat for about 10 minutes. As soon as the soup comes to a boil, remove it from the heat. Season to taste, add more spices according to preference, and mix in lemon juice.
