
Beef sauce with potatoes

Perfect for lunch. This delicious dish is popular in many countries, so its name varies depending on the region where it's prepared. I want to offer you a Southern Russian version and show you how to make beef soup with potatoes. The distinctive feature of this dish is that the meat is first sautéed in vegetable oil before being added to the pot with the other ingredients. As a result, the soup turns out very thick, rich, and aromatic, making it ideal for a family lunch or dinner that everyone in your household will love. First, we need to cut the beef into cubes (2.5–3 cm wide), season the meat with salt and pepper, and coat it evenly in flour on all sides.

Now we pour vegetable oil into a skillet and heat it well. Add the meat in portions (I did it in two batches) and sear until a golden-brown crust forms. If you add all the beef at once, it will release a lot of juice and end up stewing instead of frying. Therefore, it should be fried in batches, or use a wide skillet so that the pieces are spaced apart from each other.

Transfer the fried meat to a pot and pour water over it (1.7-2 liters), add bay leaf and a whole peeled onion. Place the pot over low heat and simmer the meat for one hour.

While the beef is boiling, we peel the remaining vegetables, cut the potatoes into cubes, the carrots into half-circles, and slice the onion into half-rings.

After an hour has passed since the broth came to a boil, we carefully remove the onion and bay leaf from it (we no longer need them). Add the chopped fresh vegetables to the water, bring to a boil, then season with salt to taste. Cook the soup for another 35–40 minutes, adding dried herbs 5 minutes before it's done.

Turn off the heat, add chopped fresh herbs to the soup, and let it sit covered for about 15–20 minutes. Then, ladle the flavorful beef and potato soup into bowls and serve. Enjoy, everyone!
