
Solyanka
Description
Solyanka "Sovetskaya" was traditionally made at home using leftover sausages and cold cuts remaining after holidays. In times of widespread shortages, it was difficult to buy all at once: boiled pork, ham, smoked sausage, and other delicacies, which people purchased on special occasions and kept until the holiday. Boiled beef was a common ingredient, as it was the cheapest meat available, while getting chicken was considered extremely lucky. Today, circumstances have completely reversed. So, let's prepare solyanka using whatever ingredients you have in your fridge. Serve the soup hot.

Prepare the ingredients for making solyanka.

Finely chop the onion and place it in a frying pan.

Dice or grate the salted or pickled cucumber. Add to the onion.

Pour in sunflower oil and 50 ml of chicken broth.
