Description

Perfect for lunch. Recipe for preparing mixed meat solyanka. A delicious and hearty dish of traditional Russian cuisine, very popular in our family. Serve the soup hot.

    1. Place the chicken meat into a saucepan. Cover with cold water and bring to a boil. When the meat starts boiling, skim off the foam and cook for 10-15 minutes. While the meat is cooking, proceed to the next step.

    2. Cut the sausages into equal, neat, small cubes. For preparing solyanka, I use two types of cooked-smoked sausage.

    3. Cut the cooked sausage (such as doctor's sausage) into similar cubes.

    4. Sauté the chopped onion in vegetable oil. My family doesn't like large pieces of onion in solyanka. I've found it better to chop the onion with a blender rather than a knife, as this results in smaller, more uniform pieces. Once the onion is sautéed, add the sausages and fry everything together.

    5. Cut the pickled cucumbers into small cubes.

    6. Add pickled cucumbers to the fried sausage products and onions. Fry everything together for 3-5 minutes.

    7. Add tomato paste to the sautéed mixture. I use paste specifically because it gives the solyanka a thicker consistency. You can use tomato juice instead, but then the solyanka will be less vibrant and more watery.

    8. Add 1.5 cups of drinking water to the pan and let everything boil for about 5-10 minutes. Add spices to taste.

    9. Remove the boiled poultry meat from the boiling broth. Chop it finely and return it to the broth. Add the sautéed vegetables to the broth and stir. Season with salt or add sugar to taste. Sugar will reduce the sourness of the solyanka.
