
Solyanka with noodles
Description
Perfect for lunch. You can serve this solyanka with sour cream. You may also add a slice of lemon and olives when serving — this is optional. I always add a couple of barrel-pickled cucumbers to my solyanka; if you don't like them, you can leave them out. I'll be honest — this soup is very tasty, rich, thick, disappears from the table instantly, and the men always ask for seconds.

Prepare all the ingredients.

Peel the potatoes, wash them, cut into small cubes, cover with water, and boil for 10 minutes.

Peel the vegetables, chop the onion into cubes, cut the carrots into small strips or cubes, or grate them on a grater.

Cut the pickled cucumbers into strips.

Also slice the smoked sausage and bacon into strips or cubes.

Heat the pan and add the oil. First, sauté the carrots and onion for 3 minutes. Then add the smoked meat and pickles, and cook, stirring, for 3–4 minutes. Add the tomato paste, mix well, and transfer the sauce to the pot with the potatoes.

Simmer the soup with the seasoning for 15 minutes, add spices and vermicelli, and cook for another 3-4 minutes.

You can serve the delicious solyanka at the table.
