Solyanka with pickled mushrooms
Description
The soup is simple and quick to prepare. There is no single recipe for solyanka, just as there isn't for many other soups like borscht or shchi. Moreover, solyanka can combine meat with vegetables and mushrooms. It's commonly believed that the more ingredients in solyanka, the heartier and tastier it becomes. Almost any mushrooms work well in solyanka: dried, fresh, marinated, or salted. This time, I suggest making solyanka with salted boletus mushrooms, which are perfect for this dish, giving it a unique flavor and velvety richness.
