A hearty first course. Solianka can be meat-based, mushroom-based, or fish-based. However, these ingredients are never mixed together in one pot—meat solianka contains only meat, smoked meats, and sausage; mushroom solianka includes dried and fresh mushrooms; fish solianka features various types of fish. I first tried meat solianka about five years ago. For a long time, I didn't even attempt to cook it myself, as I thought it was very complicated and only experienced cooks could make it properly. But recently, I found this extremely simple recipe, and I managed to prepare a delicious meat solianka, exactly like the one I had tried before. Today, I'm sharing this recipe with you. The soup is ready to serve.

Prepare all the necessary ingredients. At first glance, this dish may seem quite expensive. But here's my tip: make it after holidays, when you have plenty of leftover meat slices. This way, you'll create a delicious and budget-friendly dish. Bring water to a boil, add fresh pork and smoked pork ribs, along with 1 whole onion and a bit of salt. Simmer for 2 hours to obtain a rich broth.

Cut the cucumbers into julienne strips and sauté in a small amount of vegetable oil.

In another skillet, sauté the onion until golden brown.

Add tomato juice, salt to taste, and simmer until the liquid has evaporated.

Remove the meat from the broth, separate it from the bone, chop finely, and slice the sausage.

Return the meat, sausage, pickles, and tomato sauté to the broth. Simmer for another 15 minutes. Serve the solyanka with a slice of lemon and sour cream.
