
Chicken and sausage solyanka
Description
The recipe won't take much time. Solianka (a first course) is not traditionally prepared with potatoes, but I find the dish too fatty and incomplete without them, especially when there's a lot of smoked meat. Therefore, to lighten this heavy dish, I add potatoes. If you share this opinion, add diced potatoes (about 4-5 pieces) to the boiling broth. Then add our tomato sauté and continue following the recipe. Serve the soup hot.

The onion needs to be peeled and cut into cubes.

Cut various types of smoked sausage products into thin strips.

Place the chicken fillet in a pot. Pour water over it and start boiling. I used a 3-liter pot. While the meat is cooking, peel the pickled cucumbers and grate them on a coarse grater.

Sauté the onion in vegetable oil.

Add the grated cucumbers to the onion that has barely turned golden.

Pour a little broth from the pot into a frying pan (2-3 ladles), and simmer the cucumbers in the pan over low heat until the liquid has reduced. Remove the cooked meat from the broth, let it cool slightly, and cut into small pieces.

When all the liquid has evaporated from the pan, add the sliced meat and sausages to the pan. Mix well and sauté for about 3 minutes over low heat.

Add tomato paste and a little water (1 cup). Simmer everything together for 5-7 minutes.

Transfer the resulting mixture into hot broth. Turn on the heat under the pot. Cook for 20 minutes. Add salt, sugar, and spices to taste. Pour the finished solyanka into bowls and serve. Additionally, add sour cream and olives to each bowl.
