Smoked Meat Solyanka in Bread

Description

A hearty first course. There are many solyanka recipes, this one isn't classic, but it's extremely delicious. The soup has a pronounced smoky aroma and flavor, with a tangy, spicy, rich, and high-calorie profile. You have a wide choice of meats—beef, beef tongue, or lean pork all work excellently. To make a good broth, add vegetables; besides onion, include carrots, celery, and spices. Be sure to strain the finished broth. Cool the meat until it's easy to handle and slice. Instead of tomato paste, you can use fresh tomatoes; in this case, don't add broth while frying, so as to evaporate excess moisture. Try my solyanka—serve it hot in bowls and enjoy.

    1. To make solyanka, you first need to cook a meat broth and meat. Wash the meat, place it in a pot, cover with cold water, bring to a boil, cook for 5–10 minutes, then drain all the water and rinse the pot. Pour fresh water over the meat, add a whole onion, and simmer for 1.5 hours until the meat is cooked. About 15 minutes before the end of cooking, add a bay leaf and a couple of allspice berries. Strain the finished broth, and set the meat aside separately to cool.

    2. Chop the onion, carrots, and cucumbers into cubes. Sauté the onion in vegetable oil first, then after a couple of minutes add the carrots, and a couple of minutes later add the cucumbers. Fry for another 5 minutes.

    3. Add tomato paste, pour in a glass of meat broth, and simmer the sauté until the carrots are cooked.
