
Smoked Chicken Solianka
Description
A hearty first course. Solianka is a soup that allows you to throw in whatever ingredients you have on hand, and it only gets tastier. Today, I happened to have a delicious piece of smoked chicken. Let's make solianka with it. First, chop the smoked meat and add it to a pot of boiling water. Let the meat simmer for 20 minutes. Meanwhile, chop and sauté onions and carrots in a skillet. Separately, brown the sliced sausage and pickles. Chop leek and fresh herbs. Add all prepared ingredients to the pot as they're ready. Season with salt and pepper, and add a bay leaf. Serve hot, garnishing each portion with several olives and a slice of lemon.

Cut the smoked chicken meat and boil for 20 minutes in boiling water.

While the meat is boiling, chop and fry the onions and carrots in a pan. At the end of frying, add tomato paste and transfer it to the meat in the broth.

Cut the sausage and lightly brown it in a small amount of vegetable oil in a skillet. Add to the solyanka.

Slice the leek.

Cut the cucumbers into cubes and lightly fry them as well.

Chop the herbs and add them to the pot along with cucumbers, onion, salt, pepper, and bay leaf. Cook for another 5 minutes, then turn off the heat and let the soup stand on the hot stove for 15 minutes. Serve with a few olives and a slice of lemon in each portion.
