
Solyanka with potatoes
Description
The soup is easy and quick to prepare. This recipe will give you a rich and delicious solyanka in no time. The dish turns out less fatty than "solyanka without potatoes." Serve the soup hot.

The potatoes need to be washed, peeled, and cut into cubes.

Transfer the potatoes to a pot. Place to boil, pouring in water.

While the potatoes are boiling, peel the cucumbers and cut them into cubes. I didn't peel mine because they have thin skin.

In another pot, cook the cucumbers. To do this, transfer the cucumbers to a pot, cover with water, and boil separately. Add more water as it evaporates during cooking.

Dice the onion. Fry in vegetable oil.

Cut various types of smoked meats into cubes as well. For preparing solyanka, you can use boiled smoked pork, smoked beef, sausage, bacon, or anything else that is ready-to-eat and has a smoky flavor.

Sauté the smoked meats with onion.

Add tomato (tomato juice or tomato paste).

Transfer the sauté to the pot with the potatoes. Cook for 5 minutes. Add the separately boiled cucumbers together with the water they were cooked in. Add the capers.

Season the solyanka with salt and pepper to taste. Ladle into bowls. Add sour cream, a slice of lemon, and a few olives or pickled olives (optional) to each bowl.
