Description

Perfect for lunch. There's hardly a food service establishment in Russia—from a regular canteen to a restaurant—that doesn't serve solyanka. This soup rightfully remains in high demand thanks to its unique flavor. There are many solyanka recipes. Try this version with green peas. Ladle into bowls and serve.

    Prepare the ingredients for making solyanka.

    Wash the chicken drumstick and place it in a pot. Pour in water, bring to a boil. Then reduce the heat and skim off the foam. Cook the chicken over the lowest heat until done.

    Peel the onion and rinse it. Finely chop the onion and pickled cucumbers. Place them in a frying pan.

    Add tomato paste and sunflower oil.

    Pour 100 ml of chicken broth. Cover the pan with a lid and simmer the onions with cucumbers and tomato paste over medium heat for 10–12 minutes.

    Pour 1 liter of chicken broth into a saucepan. Add the contents of the skillet.

    Cut the ham and sausages into cubes.
