
Plum solyanka
Description
A hearty first course. For the broth, you can use any smoked meats you prefer. The sour soup becomes even more delicious if allowed to steep for 3 hours. Serve the soup hot.

Prepare the necessary ingredients.

Cut the onion into medium-sized cubes.

Pour vegetable oil into the pot in which you will cook the solyanka. Heat it up. Add the chopped onion and sauté, stirring, until lightly browned.

Cut the cucumbers into thin strips. Transfer to a separate saucepan or skillet, pour in the brine. Place over medium heat and simmer for 20 minutes after boiling.

Slice the boiled and smoked sausage into thin strips.

Add both types of sausage to the onion. Fry together until a light crust forms on the sausage.

Cut the washed prunes into thin strips.

Add to the fried sausage with onions.

Pour hot water over it. I used approximately 700 ml. Place over heat and cook for 15 minutes.

Add tomato paste to the cucumbers, bring to a boil, and simmer together for 3-4 minutes.

Add cucumbers and tomato paste to the pot. Stir. Add sliced lemon and herbs. Bring to a boil, then simmer for another 3 minutes. Remove from heat. Cover with a lid and let stand for 30 minutes. Serve after that.
