
Assorted Fish Solianka
Description
A hearty first course. Here is a simple recipe for preparing mixed fish solyanka. You can use either raw or smoked fish, for example: cod, pink salmon, pollock, or perch. I also always add king prawns, which give the soup new flavor dimensions. Good luck! The soup is ready to serve.

Step 1

Pour 2.5 liters of water into a saucepan. Bring to a boil, then add the shrimp. Cook for 2 minutes, then drain in a colander.

We wash the fish and cut it into portion pieces, removing the bones. We peel the shrimp.

Add fish scraps (fins, bones) to the shrimp broth. Also add a peeled onion and sliced carrot. Simmer over low heat for 1 hour. Strain the broth.

Dice the remaining carrots, cucumbers, and celery. Peel the potatoes.

Fry celery and carrots with cucumbers in vegetable oil. Add tomato paste and simmer for 10 minutes.

Bring the broth to a boil again over medium heat. Add the potatoes and raw fish. Boil and cook for 5 minutes, then add the sautéed vegetables. Cook for another 5 minutes. Add the peeled shrimp, olives, and bay leaves. Cook for 5–7 minutes, covered. Let the finished soup steep, covered, for about 15 minutes.
