Classic Fish Solianka

Description

The soup is simple and quick to prepare. The golden rule of fish solyanka: it should contain no bones. In our stores, you can find frozen blocks of red fish meat: salmon, Atlantic salmon, pink salmon. This is not minced meat, but small boneless and skinless fish pieces—an ideal option for this dish. However, you can always prepare the fillet yourself. Serve the soup hot.

    To prepare the solyanka, place the fish pieces into a pot. Pour in water and start boiling. We have frozen fillets of red fish sold in blocks. This is pure fillet (small boneless and skinless pieces).

    While the meat is boiling, cut the pickled cucumber into small cubes. If your cucumbers are tough, remove the skin beforehand.

    Cut the onion into small cubes.

    Sauté the onion in vegetable oil until lightly golden. Add the sliced cucumbers to the onion. Fry together for 5–7 minutes.

    Add tomato juice and a little tomato paste. The tomato paste will give the solyanka its thickness. Simmer everything together for 20 minutes over low heat.

    If desired, you can add sliced potatoes to the solyanka, or you can prepare solyanka with only fish. Add the sautéed vegetables to the boiling fish broth. Mix well. Add salt, spices, and a little sugar to neutralize the tomato's acidity. Cook the soup until done and serve.

    You can serve this solyanka with sour cream, or without it.
