
Simple Solyanka
Description
A hearty first course. You can prepare the broth in advance—I find it convenient to use a multicooker for this. You can use beef or lean pork, as well as chicken. By the way, you may skip adding meat to the solyanka and just use ham or sausage instead. I hope this idea will come in handy. Serve with fresh herbs and sour cream.

1. First, start cooking the broth or heat up the ready-made one. Peel the onion and chop it into small cubes.

2. Place in a pan with heated oil and fry, stirring, for about 5-7 minutes.

3. Meanwhile, slice the cucumbers.

4. Add a little brine, place over heat and simmer for about 15 minutes, until they become softer.

5. Add tomato sauce to the pan. Mix, season with salt and pepper to taste, then transfer to the broth.

6. Add the cucumbers as well. Add a little brine and lemon juice to taste. Cook on the stove or in a multicooker for another 10 minutes.

7. On a serving plate, place diced ham, olives or black olives, and, if desired, a slice of lemon.

8. Pour in the broth, add herbs, and sour cream if desired. Serve immediately.
