Description

Hearty and aromatic soup. The solyanka turns out very filling, with a rich flavor and aroma, and an appetizing appearance. It contains a variety of meat products, and pickled cucumbers are always added, giving the solyanka its characteristic tanginess. If you boil the tongue in advance, the solyanka can be prepared quite quickly. The soup is ready to serve.

    Prepare the ingredients.

    Boil the tongue in advance in salted water until fully cooked. The approximate cooking time for the tongue is 2-2.5 hours with the broth simmering slowly.

    Pound the pork slightly with a kitchen mallet, cut into small pieces, and place on a hot greased skillet. Fry the meat over high heat for 5 minutes on each side, then season with salt at the end.

    Cut the onion into cubes, sauté in oil in a separate frying pan until soft and semi-transparent.

    Then combine the sautéed onion with the fried meat in one skillet, continue simmering over low heat, stirring occasionally, for the next 7-8 minutes.

    Cut the sausage into medium cubes. Finely chop the pickled cucumbers in the same way. Cut the boiled tongue into strips or cubes. Add all the prepared ingredients to the pan with the meat and onions, mix well, and simmer over medium heat for 8–10 minutes. If necessary, add a little oil.

    Cut the bacon into small pieces, fry it in a separate skillet, then add flour and mix after a few minutes of frying.

    Add tomato paste, pour in the broth, and mix. Cook the sauce for 5 minutes, stirring constantly, then add ground red pepper and bay leaf.

    Then pour the sauce into the main mixture, stir, and adjust the consistency by adding broth. You can continue cooking the solyanka in the skillet or transfer it to a pot. Simmer the solyanka for 10 minutes, season with salt and pepper, bring to a boil, then remove from heat.

    Before serving, garnish the solyanka with sour cream, garlic, and fresh herbs.
