
Quick-fix solyanka
Description
The soup is simple and quick to prepare. If you had a big feast the day before and have leftover sliced meat, this is the perfect opportunity to make a quick and easy solyanka. This way, the ingredients won't go to waste, and the cook won't get too tired. Plus, it'll be great for your stomach :) The step-by-step recipe with photos will help you make this quick version of solyanka. Before serving, I recommend adding olives and a slice of lemon to each bowl. Serve with fresh herbs and sour cream.

Peel and finely chop the onion.

Peel the carrot, wash it, and grate finely.

Salted cucumbers are either grated on a grater or chopped into small cubes.

Slice the available meat products and lightly fry in vegetable oil.

In another skillet, sauté the onion and carrot for about 5 minutes.

Then add the pickled cucumbers to the onion and carrots, fry for about 3 minutes, and add the tomato paste. Reduce the heat and simmer for 5–7 minutes. Don't forget to stir!

Place the fried meat products into a pot with water and simmer for about 5 minutes.

Then add the fried vegetables with tomato to the pot.

Next, pour a glass of cucumber brine or olive brine into the pot. Or you can mix them :) Cook for 7-10 minutes.

When the cooking time is up, taste the solyanka for salt and adjust to your liking. Add pepper, bay leaf, and fresh herbs. That's it—solyanka is ready!
