
Solyanka with pork ribs

Perfect for lunch. The classic solyanka recipe doesn't include potatoes, but I took a chance and really liked it. Don't be afraid to experiment. Serve the soup hot.

Well then, let's get started with cooking. First of all, we need to put a pot with water and smoked pork ribs on low heat and let it simmer for 1 hour.

While the ribs are boiling, we have time to prepare the other vegetables. Wash the potatoes, peel them, and cut into cubes. Wait for the broth to boil, then confidently add the potatoes to the pot.

Now, the onion—His Majesty—also needs to be peeled and finely chopped. By the way, onions are very good in solyanka when sliced into half-rings. So the choice is yours.

After you've decided how to chop the onion and have already cut it, heat vegetable oil in a frying pan and sauté the onion until golden brown. Cook over low heat, stirring constantly, otherwise instead of onions you'll end up with charcoal. The sautéed onions should then be added to the pot with the meat and potatoes.

Now we move on to my favorite part: all the smoked meats you've prepared for the solyanka need to be finely diced and sautéed in a pan.

After about 10-15 minutes, add tomato paste to the ham and sausage, fry for another 5 minutes, then add everything to the broth.

Next in line are the pickled cucumbers; we cut them into cubes or strips and add them to all the other ingredients in the pot.

Take a can of olives and divide them into two parts. Slice one part into rings, and set the other part aside for now. Add a little olive brine to the broth. About 3-4 minutes before the dish is fully cooked, add the remaining olives, bay leaf, pepper, and salt to the solyanka. This is the recipe for solyanka with ribs that we've ended up with.
