
Chicken solyanka
Description
Perfect for lunch. Chicken solyanka is an extremely tasty and aromatic soup made with pickled cucumbers. Originally, solyanka referred to a soup made from sauerkraut and meat. Solyanka is quite easy to prepare. Serve the soup hot.

All ingredients intended for the broth must be covered with cold water and simmered until the meat is fully cooked. Afterward, strain the broth: keep the meat and liquid, but discard the vegetables. Tip: the longer the broth simmers, the more flavorful it will become.

Next, slice the onions and sauté them in butter. Transfer the onions to the broth, then slice the cucumbers. Add the cucumbers to the broth and bring to a boil. Tip: to prepare solyanka, use only pickled/salted cucumbers.

Add the tomato paste, mix well, and simmer over low heat for twenty minutes.

Proceed to remove the chicken meat from the bones and cut it into pieces, then dice the sausage into cubes.

Add bay leaf and spices to the solyanka. After that, add the chicken meat and sausage. Before finishing, don't forget to add olives and capers. Tip: capers can be added to the broth earlier, but olives should be added only at the very end. Adding olives too early during cooking will impair the taste of the solyanka. Solyanka can be seasoned with caper brine.
